Cheesy Chicken & Salsa Skillet

This was a last minute quick find on kraftrecipes.com. I failed to take pictures, but I'll post theirs and the directions. It is incredibly EASY and so yummy!


Ingredients:

  • 2 c. multi-grain penne pasta, uncooked
  • 1 lb. boneless skinless chicken breasts, cubed
  • 1 & 1/4 c. chunky salsa
  • 1 c. frozen corn, thawed
  • 1 lrg green pepper, cut into strips
  • 1 c. mexican style cheese

Directions:
  • Cook pasta as directed on package.
  • Heat large nonstick skillet sprayed with cooking spray on med-high heat. Add chicken, cook and stir for 2 minutes.
  • Stir in salsa, corn and peppers. Bring to boil, then simmer on med-low heat for 10 minutes or until chicken is cooked, stirring occasionally.
  • Drain pasta and add to chicken mixture; mix lightly.
  • Top with cheese.
  • Remove from heat; cover and let stand 1 minute or until cheese is melted.

You will stuff yourself with this one!
